Watermelon Salad – Favorite Summer Dish
I had a version of this a few year’s back at a restaurant – I have since adapted to, of course, make as easy as possible!
The salad holds well since there is no dressing added plus since an eclectic mix of flavors, it’s sure to be an instant crowd pleaser!
Here is what you need:
Quarter Watermelon – cut into small cubes
2 cups cooked Quinoa
4 oz Feta crumbles
4 cups baby arugula
Fresh mint – I use a ton since it’s overgrowing in my yard!
Directions:
Mix ingredients together & serve!
Add-ons:
Grilled shrimp with balsamic or Grilled chicken are perfect with this salad!
