Easiest Summer Dessert (BONUS! includes those mushy berries you were going to toss!)
Last summer, I found myself looking into the fruit bin to see those perfect strawberries I bought were no longer perfect, the blackberries a little smooshed and less than a handful of blueberries. “What the F!!” was what I first thought – my kids will never touch these as somehow a 3 year old is too good for not perfect berries!
So what’s a mom to do with a bunch of berries that are not yet bad but aren’t picture perfect?! BERRY COBBLER!!!
DIRECTIONS:
You will need an 8″ baking dish, a large mixing bowl & an electric mixer
Ingredients: 2 cups berries (any kind, I’ve even added cherries!), 2 cups graham cracker crumbs, 1/4 cup brown sugar, 1 stick salted butter, dash of cinnamon
- Preheat oven to 350
- Cut Berries to your liking (I LIKE MY BERRIES WHOLE)
- Layer berries in baking dish
- Mix together graham cracker crumbs, cinnamon and brown sugar
- “Mix” in butter to make “nuggies” for topping – I cut the stick first into small pieces
- Layer topping over berries
- Bake for 30 minutes or until golden brown on top
- ENJOY!
Another variation for the topping is 2 cups oats, 1/2 cup sugar, cinnamon
I always keep these dry ingredients in the house for a last minute dessert!
